Update - I decided to try using Macs Fan Control v1.43.
Upon launching, IT asked for some type of access permissions. Version 1.42 never did.
Anyway, it works fine. Is this in some way related to El Capitan's System Integrity Protection function?

Only one sensor (hard drive) reporting
Never had any other fan controlling software on this Mac. Both Hardware Monitor and Hardware Monitor Lite had readings for all listed sensors, and they looked like believable temperatures, based on what I've seen before on this laptop.

I used to use Macs Fan Control quite a bit in OS Mavericks, 10.9.5. In the last 2 months, I have installed OS X El Capitan and Windows 10 on my Boot Camp partition.
