Just realized, Mac Fan Control reads the temperature of DIMM Proximity 1 - 4 but not the sensor in the DIMM itself. iStat Menüs shows both the value for DIMM Proximity and for DIMM.
DIMM Proximity sensor reacts much slower than DIMM sensor, so controlling INTAKE or EXHAUST fans based on a DIMM Proximity sensor makes them to ramp up and slow down too late to actually keep the temperature of the DIMMs within range.
As iStat Menüs reads the DIMM temperature it should be possible for Macs Fan Control to do this as well.
