optimal values (MacbookPro 6.2)

Hi
mi MacbookPro 6.2 get hotter during the past weeks and months as before. So I decided to "control" the temperatures - now with "Macs Fan Control".

Now I don't know the optimal values for each item. Does anyone know a link, which gives the right information about this?

The 2nd question: Which item is the most important to observe or to choose as item to give as definition for controlling the funs (see picture).
